Crash Course: Cooking Party for Four!

Cooks of all levels:  Come together in my kitchen – or yours – to whip up a meal based on a theme: Bastille Day!

 I’ll provide food, two bottles of wine and instruction; you’ll come and learn how to assemble and cook a dinner based on a French Bastille Day theme; you’ll leave with recipes and memories of a great experience!

I had the chance to take my game on the road for the first time last night!

I have to admit, it was a little bit of an adjustment to just teach, and let things roll!

No running to the kitchen for supplies…

No rummaging through cabinets to find things…

Jackie and Amy had the prep handled, like pros!  (here > masterfully putting together a yummy garlic & herb vinaigrette)

We enjoyed Tilapia Provencale…

with traditional Mediterranean flavors like tomato and fresh fennel;

Garlic, Basil, Tarragon, and herbes de Provence;

Olive oil and kalamata olives.

It wouldn’t be as fun preparing the fantastic meal without a great wine pairing that brings out the flavors and essences of Provencale cooking… we opened a chilled bottle of Parley Lake Winery’s Frontenac Rosso.  Its spicy yet fruity character enhanced the tomato and fennel sauce- as the fantastic smells were emanating from the skillet, the wine created a desire on our palates too!

Tim minded the saute pan- I swear I think he was a chef in another life.

The dessert was fun… a Vanilla creme served in wine glasses and topped with fresh Strawberry jam we whipped up on the stovetop.

So simple… just chopped 2 cups of strawberries-

then combined 1/3 Cup of water and 3 Tablespoons of sugar and cooked it over medium heat til the sugar dissolved.

Next added 1 cup of the strawberries, brought it to a boil, reduced the heat and simmered for ~10 minutes til syrupy.

(We added a splash of balsamic to bring out the strawberry flavor and deepen the color.)

We removed from heat, mashed the strawberries, then stirred in the remaining cup of strawberries and a bit of shredded basil leaves.

Jackie, Tim and Craig enjoyed…

Amy especially enjoyed!

And fun was had by all!
